Carrots need a little more time to cook, so, peel and slice them and start cooking them first. Once they come to a good boil, turn the heat down, add the peeled. chopped potatoes, along with some chopped onion until tender. Drain, add a can of beef broth, a bay leaf, other seasonings that you like, and the stewed tomatoes. Simmer until all the flavors come together. If you have other veggies, you can add those too. It makes a good vegetable soup.
